Cold Beverages

Blueberry Fruit Smoothies

  • 1 1/2 cups frozen or fresh blueberries
  • 1/2 cup frozen unsweetened pineapple chunks
  • 1 cup pineapple juice
  • 3/4 cup lemon yogurt

Place blueberries and pineapple chunks in the bottom of a blender or food processor fitted with a metal blade.

Pour juice over fruit. Add lemon yogurt.

Puree until smooth, stopping to push fruit into the blades of the blender, if necessary.

Caribbean Banana Smoothie

  • 1 ripe banana
  • 1 cup WIC pineapple juice
  • 1 cup WIC orange juice
  • 2 tbsp. fruit-flavored syrup (optional)
  • 2 cups ice cubes

Peel bananas and cut into small pieces. Place in blender or food processor. Pour in pineapple juice, orange juice and fruit-flavored syrup (optional); blend until smooth, about 30 seconds. Add ice cubes; blend for 1 minute or until creamy and frothy.

 

Fresh Homemade Lemonade

  • 6 cups Water
  • 2 ½ cups raw sugar [or 2 cups mild honey] adjust amounts to your taste
  • 2 ¼ cups fresh squeezed lemon juice [organic if available], strained to removed seeds & pulp [about 12 lemons]

Make sugar syrup by heating the water to hot and adding the sugar. Stir until the sugar is completely dissolved. Remove from heat and allow this to cool for about 30 minutes. If using honey, heat the water to hot. Remove from heat and add the honey, stirring until completely dissolved. Allow this to cool. Stir in the lemon juice. Pour into a serving pitcher and chill in the refrigerator until cold.

For a unique alternative:
Grate a 2" piece of peeled ginger root and simmer with the sugar for 10 minutes, partially covered. Strain into a large bowl then proceed as above. If using honey, add it after simmering the water with the ginger. Allow the mixture to cool for 30 minutes, strain into a large bowl then proceed as above.

Peach/Strawberry Smoothie

Yields: 3 -1 cup servings

  • 1 ½ cups fat free milk
  • 1 container (6 oz.) Nonfat yogurt
  • 1 ½ tsp Crystal Light Raspberry Ice Flavor Low Calorie Soft Drink Mix
  • 1 Cup Frozen Sliced Peaches
  • 1 Cup Frozen strawberries
  • ½ cup Post Honey Bunches of Oats Cereal

 

Place all ingredients in blender; cover. Blend on high speed 15 sec. Or until smooth.

Serve immediately.

Peanut Butter Cocoa Banana Smoothie

  • 1 Banana (frozen or room temperature)
  • Vanilla soymilk or rice milk (or tolerate dairy milk is ok too) - as desired start with ¾ of a cup and add more as necessary
  • 2 tablespoons flax meal (ground up flax seed)
  • 2-1/2 tablespoons cocoa powder
  • 2 tablespoons peanut butter (or cashew butter or almond butter)

 

Directions:

Pour soymilk into blender, add cut up banana, and other ingredients. Blend for approximately 20 seconds on various speeds until the liquid looks "frothy".

Serves 1 Preparation time: 5 minutes. Alternative to banana: Blueberries and Musk Melon, or Kiwi & Strawberry.
